Sesame Ginger Tofu Stir Fry
Ingredients
1 broccoli
1/2 purple cabbage
1 onion
3 garlic cloves
2 tbsp of fresh ginger
2 cups of spinach
500g tofu
Sesame seeds to garnish
Rice to serve
Sauce
1/4 cup soy sauce
2 Tbsp water
2 Tbsp coconut sugar
1 Tbsp cornstarch
2 tbsp sesame oil
MethodÂ
1. Finely dice garlic and onion and add to frypan, cook until browned and aromatic
2. Dice tofu and add to pan, cook until golden
3. Begin cooking rice
4. Dice and add remaining vegetables to pan, continue to simmer for 10 minutes
5. prepare sauce by adding all sauce ingredients to a bowl and stirring thoroughly
6. Pour sauce over ingredients and simmer for 5 minutes, stirring ocassionally
7. Serve rice & add stir fry on top, garnish with sesame seeds
